Bacon Wrapped Chicken Breast

Description

Very tasty and easy to cook dish with repeatedly great results.

Ingredients

  • 2
     
    boneless chicken breast halves
  • 2
     
    slices of ham
  • 2
     
    strips of cheese, 1 cm thick
  • 2
     
    strips of sweet pickled gherkin, cut lengthwise
  • 4
     
    strips of bacon
  • 4
     
    wooden toothpicks
  •  
     
    salt and black pepper

Instructions

Pound chicken breast halves until 1/4 inch thick.   Sprinkle with salt and pepper.   Top each piece of chicken with 1 slice of ham, 1  cheese strip and  similar size strip of sweet pickled gherkin.
Fold chicken over ham, cheese and gherkin.   Wrap each bundle in two strips of bacon.   Secure with wooden picks.  Place bundles side by side in a shallow baking dish.   Bake in a preheated oven at 180 C degrees for 40 to 45 minutes or until chicken is cooked and bacon is browned.   Garnish with parsley.

I served it with potato, swede and carrot mash accompanied with pickled red  peppers.

Notes

For an extra zing, replace gherkin with jalapeno pepper or other pickle of your choice.
