Chunky Mushroom Soup

Description

This one is quite filling and may be served on its own, as a vegetarian dish, provided you use veg. stock and oil.

Ingredients

    tbsp
    butter or oil
  • 1
     
    large potato, chopped
  • 2
     
    large carrots, sliced
  • 1
     
    medium onion, chopped
  • 1
     
    celery stick, sliced
  • 1
     
    small tub mushrooms, sliced
  • 50
    g
    dry small pasta
  • 2
    pt
    (approx. 4 cups) chicken or veg stock
  • 1⁄2
    pt
    (approx. 1 cup) milk
  • 1
    bn
    fresh dill, chopped
  • 1
    ds
    salt and black pepper to taste

Instructions

Heat the pan with 1 tbsp butter or oil.
Add all veg. and mushrooms to the pan and fry for a while, stirring frequently.
Add the stock and leave to boil for about 15 min.
Add pasta and cook for further 15 – 20 min. stirring once in a while.
Pour milk, bring soup to boil and take off the heat.
At the end add chopped dill, mix well and it’s ready to serve with an optional dollop of cream to each serving.

Notes

Containing pasta, this soup doesn’t require any bread on the side to make a fully satisfying meal.
