Chunky Mushroom Soup

Ingredients
- 1tbspbutter or oil
- 1large potato, chopped
- 2large carrots, sliced
- 1medium onion, chopped
- 1celery stick, sliced
- 1small tub mushrooms, sliced
- 50gdry small pasta
- 2pt(approx. 4 cups) chicken or veg stock
- 1⁄2pt(approx. 1 cup) milk
- 1bnfresh dill, chopped
- 1dssalt and black pepper to taste
Instructions
Heat the pan with 1 tbsp butter or oil.
Add all veg. and mushrooms to the pan and fry for a while, stirring frequently.
Add the stock and leave to boil for about 15 min.
Add pasta and cook for further 15 – 20 min. stirring once in a while.
Pour milk, bring soup to boil and take off the heat.
At the end add chopped dill, mix well and it’s ready to serve with an optional dollop of cream to each serving.
