Description

I’m bonkers about soups recently or maybe it’s just that time of year when you need more hot fluids…:)

Either way, I found “Leek and potato soup” quite satisfying and flavoursome.

It’s very easy to make and any variation to fulfil your own liking works really well.

Ingredients

    large leeks or 4 small ones, chopped
  • 2
     
    large potatoes, chopped
  • 1
     
    clove garlic, crushed
  • 2
    tbsp
    butter or olive oil
  • 2
    pt
    chicken or veg stock
  • 1⁄2
    pt
    milk
  •  
     
    salt and black pepper to taste
  •  
     
    optional cream and parsley sprigs to serve

Instructions

Place fat of your choice in heated pan, add leeks and saute for a couple of minutes, until they softened around edges.   Add potatoes and garlic, mix all well, add stock and cook for about 20 min. or until vegetables are soft.   Take off the cooker and blend it in the pan if you use hand blender, otherwise cool a bit first and then transfer into your blender to process it in small portions until you get the right consistency.   Place it back to the saucepan, heat gently adding milk.   Go easy on salt but sprinkle well with freshly ground black pepper.

Optionally, put a little cream and make a swirl with a sprig of parsley on top.

Notes

I usually prefer chunky bits but in this soup, its smoothness makes it so appealing… You don’t even have to bother with serving bowls, just hot mug of it is enough to relax with your favourite movie on... mmmm...
