Description
It’s not so easy to make a tasty raw red Cabbage salad, as it’s not a softest of vegetables.
The key to enjoy it raw and full of vitamins, is to squeeze the juices out of it and I mean it literally.
Otherwise you in for long chilling with salt and vinegar, to get similar but not as crunchy effect.
Let’s get to it then:)
Ingredients
- 1small head of red cabbage
- 1red onion
- 1medium cooking apple
- 1⁄2tspsalt for marinade
- 2tbspred wine vinegar
- 3tbspolive oil
- 1⁄3tspdry mustard or ready made one
- 1tspbrown sugar
- 1dsfreshly ground black pepper
Instructions
Remove 2 outer leaves of the cabbage and cut it in 4 lengthwise. Remove the core and then shred it thinly. Place it in salad bowl and sprinkle with salt. Cut the onion in half, slice thinly and scatter over the cabbage. Now the time saving bit: squeeze it all with your hand really hard, mixing it the same time. Leave it to stand and in a meantime prepare the dressing. First mix the vinegar, mustard, sugar and pepper until sugar is dissolved then add the olive oil and combine together into nice emulsion. Now grate an apple, mix it well with cabbage and onion then again with all the dressing. Leave it to chill for a while before serving.
