Spicy Carrot and Coriander Soup No 1

Description

Suitable for vegetarians and very easy to cook.

 

Ingredients

    g
    butter
  • 1
     
    large onion, diced
  • 3
     
    large carrots, peeled and diced
  • 1
     
    large potato, peeled and diced
  • 1
     
    clove garlic, crushed
  • 1
    tsp
    curry powder
  • 1⁄4
    tsp
    cumin
  • 1
    ds
    cayenne or chilli pepper
  • 4
    c
    vegetable stock
  • 1⁄2
    c
    coriander, chopped
  •  
     
    salt and pepper

Instructions

Melt butter in a large pan.   Add onion, carrot and potato.   Cook over a low heat until vegetables are soft.

Add garlic and all spices.   Cook for a few minutes, then add the stock and boil.

Remove from the heat, add half of coriander and blend. Return to the saucepan and season to taste.   Add the rest of chopped coriander, and serve.

Notes

This aromatic and colourful soup is great for cold, dark evenings!   It’s warming and energising, and also easy on your stomach – fully recommended!!!
