Spicy Carrot and Coriander Soup No 1

Ingredients
- 20gbutter
- 1large onion, diced
- 3large carrots, peeled and diced
- 1large potato, peeled and diced
- 1clove garlic, crushed
- 1tspcurry powder
- 1⁄4tspcumin
- 1dscayenne or chilli pepper
- 4cvegetable stock
- 1⁄2ccoriander, chopped
- salt and pepper
Instructions
Melt butter in a large pan. Add onion, carrot and potato. Cook over a low heat until vegetables are soft.
Add garlic and all spices. Cook for a few minutes, then add the stock and boil.
Remove from the heat, add half of coriander and blend. Return to the saucepan and season to taste. Add the rest of chopped coriander, and serve.
