Set your hand mixer on high and work butter into a light creamy consistency in a bowl. Mixing continuously, add gradually sugar, vanilla, salt, lemon extract and then eggs one by one (mixing approx. 1/2 min. each).
Sift the flour and baking powder and add in small quantities, alternating with milk - for that set your hand mixer on medium.
Grease well your round tin approx. 25 cm in diameter and pour all the mixture, levelling it up with a spatula.
Now prepare the apples:
Peel them, quarter and core. Cut in half. Make few incisions to the half depth of each piece of fruit.
Arrange apples on top of your dough mixture and press it slightly.
With 25 g of melted butter brush each piece of fruit and scatter raisins on top (optionally - I don't use raisins at all and love it that way).
You can also brush the fruit with milk to save on calorific value.
Baking:
Electric oven: 170-200 C preheat
Fan assisted oven: 160 - 170 C do not preheat
Gas oven: positions 3-4 do not preheat
While still hot brush the whole surface with an apricot glaze and set to cool.
Serve with tea or glass of milk.
